EASY Shredded Chicken Tacos in the Instant Pot
These Shredded Chicken Tacos in the Instant Pot are SO EASY to make. They are absolutely delicious, your family will love these pressure cooker tacos!
Tacos are a dinner staple in our house. We never miss a taco Tuesday. My husband even eats tacos for breakfast...yeah, we take taco eating pretty seriously.
We have eaten classic beef tacos for YEARS with my homemade taco seasoning, but recently I thought it might be good to try chicken tacos. All of the restaurants do it, so why not try it at home? Well, I am so glad we did! These shredded chicken tacos made in the Instant Pot turned out amazing and taste so good.
Tips for making shredded chicken tacos
Use a crockpot for the best tacos! When you are in a pinch for time, the Instant Pot will still make delicious tacos, but nothing beats the slow cooking of a crockpot.
Use fresh lime before AND after cooking! The lime really makes the flavor pop in this recipe. Use some of the lime when you are first assembling the recipe. Then mix in a few more squeezes after the chicken is shredded right before serving.
Use homemade taco seasoning rather than store bought! Store bought packets work, but have you tried my taco seasoning recipe yet?! You need to! Find that recipe here.
Shred Chicken with a hand mixer. No need to use the old method of shredding chicken with two forks. Use a hand mixer (or even a stand mixer to make it really easy) to shred the chicken. It makes shredding so quick and easy.
How do you make chicken tacos in the pressure cooker?
Place chicken breast, taco seasoning and other ingredients into the Instant Pot
Put the lid on the Instant Pot (make sure it is locked and sealed!)
Set pressure cooker on high for 8 minutes per chicken breast
When time is up, quick release the cooker, then shred using a hand mixer.
Ingredients for Shredded Chicken Tacos
1/4 cup olive oil
1/2 cup salsa divided
4 chicken breasts
6 tablespoons taco seasoning
Juice of 1 lime
Instructions for Chicken Tacos in the Pressure Cooker
Pour 1/4 cup olive oil in the bottom of the Instant Pot
Add 1/4 cup of salsa
Place 4 chicken breasts on top of oil and salsa
Sprinkle 6 tablespoons of taco seasoning over chicken breasts
Squeeze the juice of one lime over everything
Place lid on pressure cooker and make sure it is sealed
Set cooker to high pressure for 25 minutes (if using frozen chicken, cook for 8 minutes per chicken breast)
When the pressure cooker is done, quick release the steam valve
Now its time to shred the tacos, using a hand mixer is the fastest way! (There will be a lot of juices in the pot, but just mix it all in, no one likes dry chicken!)
Serve with fresh guacamole or your favorite toppings.
Making this recipe in a crock pot
This recipe works great in a crock pot as well. Nothing like that slow cooked flavor. Make this recipe the exact same way in a crock pot. Cook on low for 6 hours and high for 4 hours.
More Tips...
This shredded chicken tacos in the pressure cooker recipe makes quite a lot (remember we eat tacos ALL THE TIME) this recipe freezes really well! Just put leftovers in a freezer bag and thaw in the fridge overnight when you're ready to eat.
Re-heating is easy! Place in a skillet with a small amount of water to prevent chicken from drying out.
